Mixed Vegetables and Herbs
Makes: 2 servings
Ingredients:
1/2 cup cauliflower, chopped
1/2 cup broccoli, chopped
1/4 cup celery, chopped
1/4 cup red pepper, chopped
1/2 cup zucchini, chopped
1/4 cup onion, chopped
2 tablespoons unrefined coconut oil
1 teaspoon dried basil
1 teaspoon dried parsley
1 tablespoon of water
sea salt, to taste
pepper, to taste
Preparation:
1) In a skillet, frying pan, or wok melt coconut oil over low heat.
2) Add vegetables, herbs, and water, and stir it until it is coated with coconut oil.
3) Cover it, and increase the heat to medium. Simmer it 6–8 minutes or until the vegetables are tender and can be cut with a fork. If the vegetables start turning brown lower the heat.
4) Season with sea salt and pepper, to taste.
